"He was very strict in the kitchen, very plain-speaking and kept an immaculate kitchen, but was a loveable rogue outside the kitchen.
"He is very sorely missed."
In 2007, White Rose House was awarded a five-star rating from Kirklees Council for its catering.
At the time, Mr Apperley said: "I have a fantastic team of chefs and kitchen assistants, who ensure that the kitchen runs to a strict regime and the cleaning and food hygiene are carried out to the letter."
In a Care Quality Commission inspection in July, White Rose was rated as a two-star, good quality home.
About the food, the inspectors said: "Menus offered a variety and choice of food taking into consideration the food preferences and likes and dislikes of people living in the home."
The driver of the truck that was involved in the collision with Mr Apperley was arrested and has been bailed pending further enquiries.
