PAX Burger in Lindley opens to 130 diners on first day

A gourmet burger bar in Lindley opened with more than 130 diners eager to try award-winning chef Eric Paxman’s fare.

PAX Burger opened its doors at noon in Lidget Street in what was the former La Cocina restaurant.

The interior certainly marks it out from the crowd with vivid yellows dominating even down to the colour of the napkins and the grouting in the walls.

Diners can choose from beef, chicken and lamb burgers plus a vegetarian option, all made with a twist and with sauces as vivid as the decor.

And there are an excellent selection of desserts ranging from baked New York cheesecake and butterscotch waffles.

Mr Paxman who owns the nationally renowned Eric’s restaurant, just a few yards away, said he was delighted with the response.

He said: “It’s been six months in the planning but it certainly looks like it’s going be worthwhile.”

The fully licensed bar is also open to casual drinkers who can choose from root beers, fancy craft beers from suppliers including Magic Rock Brewery in Birkby as well as some of the most exotic cocktails in town.

Inevitably, given the quality of the ingredients and the highly stylised interior the prices are rather more than diners would usually pay for a burger with prices starting from £9.
