A LOCAL B&B proprietor went back to school to hone her cooking skills.

Viv Campbell, who runs the Laneside Farm B&B in Meltham, was among a group of Yorkshire members of Farm Stay, the UK’s largest network of farm-based accommodation providers, who went back to the classroom.

They were at The Cooking School at Dean Clough Mills, Halifax, which offers professional development courses for those working in the catering and hospitality industry. Chef Mathew Benson-Smith created a tailored course – dubbed ‘Brilliant Breakfasts and Easy Outstanding Suppers’ – for the Yorkshire Farm Stay ladies.

They made their own bread, granola, kedgeree, fruit smoothies and hollandaise sauce, and were also shown how to make quick supper dishes and desserts.

Viv said “It was a fabulous day in the state-of-the-art kitchen in a very historic setting. We learned a great deal and some wonderful new ideas, which many of us plan introduce to in our own farm kitchens to enhance the overall experience on behalf of our guests.”
