A chef from Holmfirth has landed a job at one of the best restaurants in the world.

Some 27,000 people are currently on the waiting list for Noma Australia at Barangaroo wharf in Sydney.

It’s a three-month pop-up restaurant and Holmfirth man Stephen Radcliffe, 36, is now working in the kitchens.

Noma is based in Copenhagen, Denmark, and the restaurant there is currently ranked third in the world by international award giver Restaurant magazine,

Noma offered Stephen a place for its new venture Down Under after being impressed by the creative flair he practises at Michelin-recommended Hotell Mossbylund in Sweden.

The ex Holmfirth High School pupil, formerly of Binn Brow on Binns Lane, is one of the aspiring chefs with Australian residency who will work alongside Noma founder René Redzepi and his award-winning team to serve up around 5,500 meals costing £237.90 a head.

Noma, which works with local ingredients including foraged foods, has beaten restaurants such as Spain’s El Bulli and London’s Dinner by Heston (Blumenthal) in the world ranking awards.

It is the opportunity of a lifetime for Stephen, who dreamt of being a chef since he was a Scout.

His mum, Yvonne, said: “We are so proud of him.

“He got Australian residency due to moving out there when he was 18 and becoming a chef at a restaurant called The Woolshed in Cairns .

“He’s now living in south Sweden but applied for the role, which was only open to people with Australian residency, and was picked.

“He is the head chef at Mossbylund but the owners have been really supportive of him because what he learns will benefit them.

“Noma is just one of those names everyone knows about.

“They do these pop-ups somewhere in the world every year because at that time in Denmark there isn’t much local produce.

“We’d love to go and sample his dishes there.”

Stephen, who has a sister Nicola and two sons Benjamin and Oscar, began working as a chef at 14.

“Stephen has loved cooking since he was young”, said Yvonne.

“He won a county cooking competition in Scouts and when he went to high school he knew that’s what he wanted to do.

“From 14 he worked at Premier Etage in Holmfirth and then Karbowski’s.

“When he qualified in catering from Huddersfield Technical College at 18 he left for Australia and worked there as a chef for 10 years.

“He worked in Cairns at a restaurant called the Woolshed then became head chef at Mangostins.

“I’ve tasted his food and it’s excellent.

“He creates fusion food and sources everything locally and is big on using foraged foods.”

Redzepi moved 130 staff across the world to the pop-up restaurant, giving its four resident chefs 100kg luggage allowances to transport their cooking tools.

It will serve its last meal on April 2.
